ROTOR ROTATING RACK OVEN. REAR

Rotor is a rotating rack oven. It is a completely stainless steel oven with a unique backing chamber, demountable at any time, which installation requires short time. It is suited for backing different types of bread and other backing products, whether small or middle size.

The different steel thickness, the particular folding system and the special combination of its parts optimise the functioning and cut down the loss of heat. The oven functions with liquid or gas fuels, by using appropriate burners, or with electric power.

The air is heated in a proper heat exchanger with a heat resistant surface that allows a big thermical exchange. It is situated in the back part of the oven. The heated air is distributed in the baking chamber, by a fan through some adjustable opening. Then the exhausted air returns to the heate exchanger to begin another cycle.

The oven has independent high-yielding steam devices to allow several consecutive baking with steam exhaustion valve and adjustable timer. The oven has a perfect thermic isolation. No toxic materials are employed, particularly asbestos.

The air is heated in a proper heat exchanger with a heat resistant surface that allows a big thermical exchange. It is situated in the left side part of the oven. The air heating is due to transmission of heat from combustion products to the air getting in contact with the warm surface of the exchanger.

The heated air is distributed through a fan in the baking chamber. The exhausted air returns to the heatexchanger to begin another cycle. The oven has independent high-yielding steam devices to allow several consecutive baking with steam exhaustion valve and
adjustable timer.

The oven complies with the European Community directives applicable.

DECK STEAM PIPES OVEN
4 CHAMBERS 2 DOORS

Tubix is a steam tube oven. The chief characteristic is its heating system, with heat supplied by a dense network of closed circuit tubes in which steam circulates. The baking chambers are wrapped by these annular tubes, while the roof and the ceiling of each baking chamber are heated by transversal tubes.

The baking floors into the chambers are made up of cement plates of a special mix. The walls of the chamber are panelled with stainless steel sheets and are supplied with lighting, independent high-yielding steam devices to allow several consecutive baking, and with steam exhaustion valve.

The stainless steel input mouths are arranged for the use of the proper conveyor belts, and are equipped with balanced doors of tempered crystal glass and steel. This type of oven provides and guarantees low consumption, quick temperature recovery and perfect uniform baking. All made possible by perfectly sized smoke
ducts made of refractory bricks, automatic device for the draft adjustment and the lateral paddled concretes.

The oven complies with the European Community directives applicable.

STEAM PIPES OVEN
4 CHAMBERS

 

Zoom is a steam pipe oven with baking chambers arranged vertically. Heating is with a circular closed-circuit system: a dense band of pipes in special steel fill with steam and radiate heat into the baking chambers they encircle.

The floor and ceiling of each chamber are in direct contact with the band of pipes and receive heat by conduction, transmitting it directly to the product being baked. Each chamber is made in stainless steel and supplied from independent high-yielding
steam generators. The baking products rest on slabs made from a special cement mix suitable for alimentary use. The doors are made in tempered glass.

A carefully designed combination of substantial mass and volume, with efficient insulation, provides the oven with even heat distribution and its characteristic economic efficiency.

The chambers dimensions are cm. 80x120, cm. 120x120 or cm. 120x180 with height of 23 cm. for the upper and 17.50 cm. for the others. The total baking surface is 4, 6 or 9 mq. The oven works with a gas or diesel burner.

Bassanina Planos - Electric Modular Deck Oven

 

Made in stainless steel front and outer panels, for easy cleaning, it is suitable for baking various kinds of small and medium sized bakery, pizza, roast, food  and confectionery products.  

The standard control panel is electromechanical  and the digital control panel with weekly auto-start function and 9 storable programs is optional.

For baking bread the hood can be with steam exhauster. The glass doors guarantee the view of the product while as option is possible to have the stainless steel doors.
